Bean History

Harvesting

Coffee is mainly hand-picked, ensuring that only ripe cherries are harvested while unripe ones are left for later. Our workers make several passes typically 5 to 6 rounds over a period of many weeks. This repetitive process allows every cherry to reach optimal maturity before being collected.

Sorting & Processing

Following the harvest, a dedicated sorting process takes place. The ripe cherries are meticulously separated from any unripe ones by hand. This manual sorting ensures that only the appropriately matured fruit moves forward to the drying stage, maintaining consistency in the natural process.

Drying

Sun drying remains our preferred technique, utilizing a system of raised beds. The total drying duration ranges from 12 to 15 days, heavily influenced by atmospheric factors such as wind, cloud cover, and sunlight. The process continues until the beans attain the ideal moisture content of 10–12%.

ABOUT THE SITE

The site is located in Oromia, Bilida Bukisa. The Bilida Bukisa washing station works in partnership with 300 committed smallholder farmers, each managing an average of just 2 hectares of land. This reflects the traditional culture of small-scale, environmentally friendly coffee production in Kercha. These farmers utilize generational best practices, including the organic production of heirloom varieties under natural forest canopies. Through selective manual picking and careful cherry sorting, they ensure only the ripest beans are processed. By combining traditional agro-ecological techniques with the precision of the Bilida Bukisa washing station, these farmers consistently produce coffees of the highest quality.
