Harvesting

Coffee cherries are selectively hand-picked, ensuring only fully ripe cherries are harvested. Multiple picking rounds—typically 5 to 6 passes over several weeks—are conducted to achieve optimal ripeness and uniformity.

Sorting & Processing

Post-harvest, cherries are carefully hand-sorted to remove underripe and defective fruits. We utilize traditional sun-drying methods on raised African beds, allowing for even airflow and controlled drying.

Drying

The drying process takes approximately 12 to 15 days, depending on environmental conditions such as sunlight intensity, wind, and cloud cover. Beans are dried gradually until they reach an optimal moisture content of 10–12%, ensuring stability and quality preservation.
